yummilicious home made pandan kaya.
ingredients:
coconut milk 1 1/2 cup
sugar 1 1/2 cup
eggs 4
pandan leaf 1
sugar for caramel 1/4 cup
directions:
- whisk eggs and sugar until all the sugar dissolves
- heat the mixture using double boiler or slow cooker, add coconut milk little at a time while stirring.
- put pandan leaf and stir once in a while in about 25 minutes.
- after 25 minutes the mixture will start to thicken pretty fast, so you have to keep on stirring until you are satisfied with the texture.
- meanwhile, heat the 1/4 cup of sugar-stirring continuously until the sugar liquefy and turned brownish**, pour water immediately***
- then, pour the caramelized sugar into the kaya mixture and stir a little bit more until you get the right kaya consistency.
- done!
- serve with fresh toasted bread and butter.yummm...
***CAUTION!this is an exothermic reaction, so be careful. the mixture will pour out if you use a shallow pot,so make sure you use a deep pot instead. and liquefied sugar is VERY VERY hot. do not attempt to touch the with your hand unless of course if you don't mind getting a third degree burn. ;p
