KAYA


yummilicious home made pandan kaya.

ingredients:

coconut milk 1 1/2 cup
sugar 1 1/2 cup
eggs 4
pandan leaf 1
sugar for caramel 1/4 cup


directions:
  1. whisk eggs and sugar until all the sugar dissolves
  2. heat the mixture using double boiler or slow cooker, add coconut milk little at a time while stirring.
  3. put pandan leaf and stir once in a while in about 25 minutes.
  4. after 25 minutes the mixture will start to thicken pretty fast, so you have to keep on stirring until you are satisfied with the texture.
  5. meanwhile, heat the 1/4 cup of sugar-stirring continuously until the sugar liquefy and turned brownish**, pour water immediately***
  6. then, pour the caramelized sugar into the kaya mixture and stir a little bit more until you get the right kaya consistency.
  7. done!
  8. serve with fresh toasted bread and butter.yummm...
**take good care not to burn the sugar, else you would end up with a bitter kaya. the colour of the sugar should be a little bit darker than the kaya in the picture, but not to0 dark.

***CAUTION!this is an exothermic reaction, so be careful. the mixture will pour out if you use a shallow pot,so make sure you use a deep pot instead. and liquefied sugar is VERY VERY hot. do not attempt to touch the with your hand unless of course if you don't mind getting a third degree burn. ;p

potato lasagne


we bought too much potatoes. a whole 10 kg just for the two of us, it would have been fine if we're Irish and loved our meat and potatoes but as it is...we're just to0 Malaysian to have been able to digest the whole load of the yellow complex polysachharides...we love our white rice to0 much I'm afraid.s0 i decided to give the Dunaras Clan a golden potatoey treat!!! hence the potat0 lasagna, also my first attempt at making a foreignly foreign dish...cross my finger, and pop the stuff in the oven...when it came out, it actually taste like lasagna...co0lie...but its to0 much 0f a w0rk, i wouldn't bother making it again...next time I'll just stick to the old ways of making lasagna~

the bo0bie cake! ;p

thav's birthday. i was invited f0r the party and t0 co0k kuey te0w f0r the guests. ;p s0 much f0r inviting me ya Hema? hahah...n0t that i mind~there was n0 cake unf0rtunately, but since i've been itching t0 try making a bo0bie cake eversince ever~i 0ffered t0 make 0ne, in h0pe that it'll turn 0ut 0kay since i've never made 0ne using a micr0wave!!!but hey,it turn 0ut fine,lucky f0r thava~haha...i think i'll stick with micr0wave after this.its easy,less mess,less co0king time! kewl. it 0nly to0k me 5 minutes t0 'bake' the cake...see,t0ldja!just use the usual cake mix,c0ver the t0p with cling film, turn the micr0wave t0 high and heat f0r 5 minute and v0ila~bo0bscake ready t0 serve~and it turned 0ut yummy s0 they say~

trifles~

i had lots of leftovers left from the cake that i made for the art exhibition, s0 instead 0f thr0wing them away i figured better make something else 0ut 0f it right?suddenly the word trifle *POP* into my mind. yummm...

blueberry mang0 trifle



ingredients:

  • vanilla cake leftovers
  • blueberry
  • mango juice - i use juhayna mango juice-they have this very intense mango flavour
  • whipped cream
  • milk
Preparation:

  • put the cake on the bottom of glass, drench the cake with some mango juice
  • layer with whipped cream, throw some blueberries in
  • repeat the process and chill the trifle before eating
  • serve with vanilla ice cream! yummmm~

ingredients:


  • choc cake leftovers
  • strawberries
  • whipped cream
  • chocolate ganache (you can always use chocolate sauce,i used this because i had leftover from miray's cake)
  • milk
preparation:

  • pretty much the same as ab0ve. except that y0u drench the cake with milk instead
  • layer with whipped cream, strawberries and p0ur some chocolate ganache~
  • heaven!

caramel bread pudding





Ingredient:

  • bread slices - 6
  • warm milk - 2 cups
  • white sugar - 1/2 cup
  • brown sugar - 1 cup
  • hot water - 1 cup
  • cinnamon powder - 1/2 tsp
  • eggs - 4 (lightly beaten)
for the custard:

  • milk - 1/2 cup
  • custard powder - 1 tbsp
  • vanilla essence -1/2 tsp
  • sugar -2/3 tbsp

Preparation:

  • place bread in greased baking dish
  • add brown sugar to hot water and pour the mixture over bread
  • combine the rest of the ingredients together and pour over bread
  • bake at 180 °C for 50-60 mins
  • while waiting for the pudding to co0k, make the custard.
  • mix all the ingredients in a pot and keep on stirring under medium heat until the mixture thickens.
  • this dessert can be served warm or cold

*taste even better with berries and vanilla ice cream! nyummm~
serving: 6-8 pe0ple

Potato Salad with smoked mackarel and beetroot



ingredients:

  • baby potatoes
  • beetroot
  • onion
  • smoked mackarel
  • chives
  • parsley
  • dash of salt
  • lemon
  • mayonnaise
Preparation:

  1. bake the baby potatoes at 150°C around 30-45 minutes (until it is well co0ked).
  2. remove the skin afterwards.
  3. squeeze some lemon juice on the mackerel and cut it into smaller pieces
  4. slice the onion and beetroot into smaller pieces to0.
  5. in a big bowl, throw in all the ingredients and ta-da! a big bowl of seafo0d p0tat0 go0dness. =)
p/s: serve with some dinner loaves with chesses on top. heaven. seriously!



i was wandering the streets of Riga with a friend scavenging for breakfast. it was 10am yet n0 cafes were opened. weird aite? cafes are supp0sed t0 0pen early s0 that pe0ple c0uld get their breakfast and drink c0ffee-hence the w0rd cafe.isn't it?0k. wtv. s0 anyway, we chanced up0n this 0ne small secluded cafe at the end of a nowhere street. we went in and since i was so damn hungry, i almost ordered everything that was on display. heheh. and it just so happen, i saw a really co0l lo0king glass bowl filled with potato salad dotted with pink stuff. interesting. decided to try it and voila~hence the recipe above. this is seriously one of the best salad i ever taste.

blueberry white chocolate creme brulee


Ingredients:

  • Fresh cream 200 gm
  • egg yolk 3
  • white chocolate whole bar
  • vanilla essence 1 tsp
  • greek yoghurt 100 gm
  • honey 2-3 tbsp
  • blueberries!!! as much as you like
  • sugar 6 really big tbsp

Preparation:
  1. Set pan over medium low heat and stir in cream
  2. Heat until bubbles form around edge.
  3. Add chopped white chocolate, stirring until smooth.
  4. Remove from heat and let it cool off first.
  5. In a bowl, whisk egg yolks with vanilla.
  6. Whisk in cream mixture.
  7. Pour into 6 ramekins or custard cups.
  8. throw in blueberries~as much as y0u like in every ramekins.
  9. mix greek youghurt with honey and pour in the middle of the ramekins.
  10. Place ramekins in baking pan, pour in enough boiling water to come halfway up sides of dishes.
  11. Bake in 300 degree oven for 45 minutes or until set around edges but still soft in centre.
  12. Remove ramekins, let cool at room temperature.
  13. meanwhile, make the caramel toppings by making a burnt sugar.
  14. put the sugar in a saucepan at medium heat and keep on stirring until it becomes liquid. the colour should be golden brown.
  15. immediately remove from heat and carefully pour the hot sugar on top of the brulee.
  16. voila!
  17. this creme brulee can be served warm or cold. but i prefer it cold, so i would usually refrigerate them around 3-4 hours before serving.

cheesy sardine wrap


easy and yummy!

ingredients:

  • sardine in tomato sauce
  • onion
  • chillies
  • sugar
  • salt
  • cheddar
  • mozarella
  • tortilla wrap
  • oil
preparation

  1. heat the oil in a pan.sautee the sliced onion,garlic and chillies.
  2. throw in the sardines, a dash of sugar and salt-according to taste
  3. put the filling in the center of tortilla wrap. put some cheddar and mozarella-heat in the microwave (around 1 mins)
  4. wrap.
  5. &
  6. EAT!!!
